The caves were originally inhabited by pre-historic man, but by the 16th century were being used to store locally made Cheddar cheese. This ceased approximately 300 years ago, but Ford Farm have once again introduced the practice of ageing and maturing their traditional West Country Farmhouse Cheddar within the caves.
