Ricks Cauli & Broccoli Cheese with a smidging of Onion Marmi

Cauliflower Cheese
  1. Steam the cauliflower and broccoli florets for about 5 minutes, so that they still retain a nice bite

  2. In the meantime to make your cheese sauce add the flour, milk and butter in a saucepan and whisk them all together, keep whisking until it has thickened.

  3. Now add most of our Vintage Mature Cheddar (leave a small amount for the topping if you wish), season with freashly milled black pepper (if you wish) and marble in our Onion Marmalade.

  4. Take a wide, ovenproof baking dish; the more surface area, the more crispy top you'll get. Then add the cauliflower, broccoli and cheese & onion sauce, scatter with the remaining cheese and place under the grill for 5 minutes until it is bubbling and golden on top.
