A beautiful winter warmer, this Cauliflower Cheese is bound to warm up the coldest of nights.

Steam the cauliflower and broccoli florets for about 5 minutes, so that they still retain a nice bite

In the meantime to make your cheese sauce add the flour, milk and butter in a saucepan and whisk them all together, keep whisking until it has thickened.

Now add most of our Vintage Mature Cheddar (leave a small amount for the topping if you wish), season with freashly milled black pepper (if you wish) and marble in our Onion Marmalade.

Take a wide, ovenproof baking dish; the more surface area, the more crispy top you'll get. Then add the cauliflower, broccoli and cheese & onion sauce, scatter with the remaining cheese and place under the grill for 5 minutes until it is bubbling and golden on top.
25g Butter
1 Cauliflower (halved and cut into florets)
1 Broccoli (halves and cut into florets)
25g Flour
300ml whole milk
125g The Truckle Cheese Co Vintage Mature Cheddar Cheese
1 heaped tsp The Truckle Cheese Co Onion Marmalade
