A delicious tart made with our very own goats cheese.

Billy's Roasted Spinach, Tomato & Goats Cheese Tarts

Billy's Tart
  1. Preheat the oven to 200C/400F/Gas 6. Lay the pastry circles in a small tart/flan tin. 

  2. Brush the pastry with the beaten egg and blind bake for approx 20 minutes or until golden in colour.

  3. Whilst the pastry is cooking gently sauté the onion, tomatoes, garlic, basil and spinach in the butter and olive oil for approx 10 minutes until the onions are caramelized and the spinach has started to wilt.

  4. Dry fry the pine nuts in a small frying pan, keep an eye on these as they do not take long a minute or two on a high heat and keep them moving.

  5. Add the onions etc into the pastry cases.

  6. Lay some slices of ‘The Truckle Cheese Co’ Goats Cheese to the top, then sprinkle the pine nuts over the top

  7. Place under the grill until the cheese has melted and bubbling.

  8. Drizzle with your favourite Olive Oil and Balsamic Vinegar

Serves 4
4 x 15cm/6in circles of Short Crust pastry, rolled to 5mm thick
1 tbsp of olive oil
12 cherry tomatoes, halved
½ small onion white or red (finely chopped)
2oz Mushrooms finely sliced
Baby leaf spinach
1 garlic clove
Basil
2cm/½in cube of butter
1 tbsp of balsamic vinegar
Pine nuts
150g ‘The Truckle Cheese Co’ Goats Cheese
