Chicken Breast Stuffed witth Stilton in a Pear & Vanilla Pod sauce
A deliciously cheesey chicken breast, best served with new potato's and fresh vegetables.
Chicken Breast Stuffed w Stilton in a Pear & Vanilla Pod sauce
For the chicken, preheat the oven to 200C/400F/Gas 6.
Slice the chicken lengthways to form a pocket and stuff with the Stilton.
Close and secure with cocktail-sticks and season with salt and freshly ground black pepper, then place in the oven for around 20 minutes.
Whilst the chicken is cooking you can prepare the sauce by pouring the cream into a saucepan and stirring in the Pear & Vanilla Pod chutney on a low heat.
Serve with seasonal veg and new potatoes.

2 chicken breast
110g/4oz The Truckle Cheese Co Blue Stilton Cheese
salt and freshly ground black pepper
2 tsp olive oil
For the sauce
125ml of Double Cream
2 heaped tsp of ‘The Truckle Cheese Co’ Pear & Vanilla Pod Chutney
